1-1/2 lbs. extra-lean ground beef
1 egg
1/2 tsp. chopped garlic
1/2 cup chopped onions
1/2 cup chopped green pepper
3/4 cup finely chopped celery
1/2 cup tomato sauce
1 cup dried breadcrumbs
1 tsp. Dijon mustard
1 Tbsp. dried parsley
Salt and pepper to taste
Preheat oven to 325 degrees. Mix all ingredients, shape into a loaf, and place in a loaf pan. Bake for about one hour. Depending on the shape and thickness of the loaf, you may need to cook it slightly longer. Serves 6.

I cant wait to try this recipe!!! This was the one I was trying to get off Beachbody's site the other day!!! We had the Citris Chicken, sooooo good, even Sweet Baby liked it... and she's going through an "I dont wanna eat meat" stage!!
So good to here! I like meatloaf every once in a while and this is a good one.
